Can I make this salsa ahead of time? Yes! It’s best enjoyed the same day, but you can make it up to 24 hours ahead and store it in the fridge. The flavors will meld beautifully, though the mango may soften slightly.

  • 2 ripe mangoes, peeled, pitted, and diced

  • 1 small red onion, finely chopped

  • 1 red bell pepper, diced

  • 1 jalapeño, seeded and finely chopped (optional, for extra heat)

  • ¼ cup fresh cilantro, chopped

  • 1–2 limes, juiced

  • ½ tsp chili powder

  • ¼ tsp smoked paprika

  • ¼ tsp ground cumin

  • Pinch of cayenne pepper (optional, for extra heat)

  • ½ tsp brown sugar

  • Small pinch of salt

Preparation

  • In a medium mixing bowl, combine the mangoes, red onion, red bell pepper, and jalapeño.

  • Add the cilantro and lime juice, then sprinkle in the chili powder, smoked paprika, cumin, cayenne (if using), brown sugar, and salt.

  • Toss gently until everything is well mixed. Taste and adjust seasoning with more lime juice, salt, or spice as desired.

  • Serve immediately or refrigerate for 30 minutes to let the flavors meld.
