    This incredibly delicious salad is hearty and full of flavor. Mixing tones of veg with pops of sweetness. < Back Kale and Quinoa Salad Prep Time: 20 Minutes Cook Time: 20 Minutes Serves: 6 Servings About the Recipe Years ago, when kale first came onto the scene as the trendy superfood, sometime in the 2000s, I didn't quite understand the allure. It seemed like a prehistoric spinach of sorts, and looked as though it would take me all day to chew through one leaf. Especially since everyone kept saying how it was best to massage the hearty leaves before using them to tenderize them and make them easier to chew. If anyone needed a massage, it was me, not my salad. Taking a mental note of the ingredients, this is my take on it. Crunchy, juicy, sweet and filling. I always make a huge bowl of it so that I can enjoy it throughout the week. This salad is super simple to make and is packed with nutrition. Along side the kale it has fluffy quinoa, carrots, feta and surprise bursts of grapes. Don't get turned off by fruit in salad! This sweet and savory combo is mouth watering, I promise. This is all then brought together by the lime-honey dressing. Again, hint of refreshing lime with a sweet twist of honey. Talk about nutritious and delicious! Then I saw someone introduce Oprah to kale chips and her reaction to how amazing kale was, made me feel like, well if Oprah likes it, it can't be that bad. So I found myself, washing and massaging kale. Turns out, it isn't as time consuming as I had thought it would be and it is so versatile! Anything from chips, salads and smoothies. Hot or cold. Raw or cooked. So many amazing recipes worth discovering! Kale chips are surprisingly simple to make. They are light and crispy and melt in your mouth. Even my kids get excited when they have a side of kale chips with their supper. My only complaint, is that I can never fit enough into my oven. Putting kale in stews or stir fries, or in a green smoothie is also amazing. But this post is not about kale chips, nor is it about kale smoothies (sorry guys). This post is about the best kale salad that you will ever have. No joke. This salad is hearty, juicy, flavorful and can stand to be a meal on it's own. It is my go -to potluck plate. One of the things I love about it is that you can make it ahead of time. Thanks to the hearty prehistoric nature of the leaf it isn't going to go all soggy and mushy on you like most other salads. In fact, the flavors will just infuse the salad more. I was introduced to a version of this salad by one of my best friends. She worked around the corner from an upscale grocer in Montreal, and would buy her lunch there from time to time. One day she started raving about how amazing this salad was. She just couldn't get enough. Even the days that she brought a lunch with her, she would end up going to buy a small kale salad to add to it. She promoted the deliciousness of this salad for months before I tried it for myself. How good could it be? It sounded so simple. Kale, quinoa, carrots and grapes (yes, grapes). Let me tell you, she was right. And I am forever grateful that she introduced it to me. This salad was that good. And again, extra amazing, because if you don't finish it, no matter! Bring to a boil, reduce heat to low, cover and cook for about 12 mins (or until cooked through and water has been absorbed). Fluff with fork and let cool. Step 2 While quinoa is cooking, prepare raw ingredients. Remove kale leaves from stalks, wash thoroughly and roughly chop. Halve the grapes. Finely slice the red onion (you can also leave it out if onion is not your thing). Grate the carrots (I use the medium size grate). Roughly chop the feta. Juice the lime. Step 3 Place kale leaves in a large bowl, drizzle with olive and a sprinkle of salt. Massage leaves with your hands until the fibers break down and they become softer and slightly reduced in volume (about 2-3 minutes). Step 4 Add grated carrots, sliced onion and cut grapes to the bowl of massaged kale. Stir in the cooled quinoa and sprinkly in feta. Step 5 Prepare the dressing by combining the lime juice, olive oil, apple cider vinegar, honey, and Dijon mustard in a small bowl. Add salt and pepper to taste. Mix well.     This caramelized nut mixture is delicious as a candy treat or can be crushed and used in other recipes. < Back Praline Prep Time: 10 Minutes Cook Time: Serves: 2 Cups About the Recipe The holidays are filled with nuts, chocolate and sweet baking. It's a cozy time spent with friends and family. One of my favorite sweet treats this time of year is candied nuts. So simple to make and so delicious. It is one of those dangerous snacks that you can't stop eating (I go nuts for nuts. Haha.) But seriously, there is just something about the crystalized sugar texture with the creamy texture of the nuts. Whether, they are pecans, almonds or hazelnuts, you can do so much with them. Add them to your favorite desserts for a next level twist. Sprinkle them onto cakes, ice-cream or even chocolate mousse. From serving these goodies as whole nut candies or making them into smoother wafer candy tiles. This easy praline recipe is one to try! If you want to keep the nuts whole, simply keep the nuts intact instead of pulverizing into flour. Be careful, the sugar will be very hot. When you mix in the butter, it will bubble. Keep stirring until the butter has melted and is well incorporated. The mixture will become translucent. Next, stir in the nut flour mixture. The mixture will slowly become more opaque. Keep stirring until everything is well incorporated. Line a baking sheet with parchment paper. Spoon rounds of your hot praline mixture onto the baking sheet (be careful not to touch the syrup, it will be very hot). The size of your dollops will depend on your cooking project.     Flaky and light, these easy to make apple turnovers will be a family favorite! < Back Easy Apple Turnovers Prep Time: 20 Minutes Cook Time: 25 Minutes Serves: 8 Servings About the Recipe As the autumn leaves start falling from the trees, and my surroundings begin looking more and more bare, I start to really have the urge to cozy up indoors. As part of my hibernation preparation, I start longing for the warmth of freshly baked treats. And if you are like me and are craving a little sweet treat this time of year, and looking for something to do with all those apples you picked, there is nothing easier and more delicious than a light and flaky apple turnover. These little pockets of goodness are just what one needs for a special morning treat or as a side to ones afternoon tea. Light and flaky, it won't leave you feeling heavy and overstuffed (unless you simply can't help yourself and eat two or three. I won't blame you). I usually don't have the patience to make my own phyllo pastry. So store bought will do just fine. No need to give yourself more work to do. You just have to remember to thaw the dough ahead of time since it usually comes frozen. I try to put mine in the fridge the day before I plan to make them, but when I forget, I leave the dough out on the counter for 2-3 hours to defrost to room temperature. I love this recipe because it is simple to make, has minimal ingredients and everyone will rave about your baking skills. I usually use Honeycrisp apples, but that is just because they are what my family loves to eat most, so those are the ones I tend have on hand. You can also use Fuji, Gala or Granny Smith which taste equally as delicious. Peel and then core your apples (I just prefer mine peeled, but if you don't want to bother, you can leave the skin on) . If you have a coring tool it makes your job even easier as well. Once your apples are naked, chop them into bite sized cubes (think about how big you would want the chunks to be in your turnover). Mine are usually about 1.5-2cm big. Step 2 Melt the butter in a sauce pan. Add apples and cook until softened (approx. 5 mins) stirring often. Add in brown sugar, cinnamon and salt. Cook for another 2 mins. Scoop out 2-3 tbsp. of cooking liquid and set aside (you'll use this for making the glaze). Add the cornstarch to the apple mixture, stir and cook for an other 2 mins until liquid has thickened slightly. Set aside. Step 3 Assembling the turnovers . Time to roll out the dough. Flour your work surface so that the dough does not stick as you are rolling it out, it will be easier to handle this way. Take one square at a time and roll it out with a rolling pin into a square about 3mm thick. Step 4 Divide the dough into four equal squares and put a heaping scoop of the apple mixture into each square. You want to leave enough dough around the edges to be able to close each pocket properly or it may leak out during baking. Step 5 In a small bowl combine the egg with two tbsp. of water. Mix well until you have a smooth egg wash. Brush the edges of the dough with your egg wash mixture. Do not make it too wet. You just want to put just enough to make the edges stick. Fold each square into a triangle by lining up opposite corners. Press down along the edges to close into a nice pocket. Step 6 To add extra security so the edges do not separate during baking, use a fork to press along the edges. This will not only seal your sweet packets of goodness, it also adds a nice visual finishing touch. Step 7 With the help of a spatula, carefully transfer the apple turnovers onto a lined baking sheet and bake at 400F for 20-25 mins. until golden brown. Apple Glaze (optional) While the turnovers are baking you can prepare the apple glaze. The turnovers are wonderful on their own and if you are not a big sweet tooth, you can definitely enjoy as is. If you want to add a little extra sweetness, mix together the powdered sugar, the spoonful's of apple juice that you had placed aside earlier and the vanilla. The combination of flavors and textures in these ice cream cakes is truly delightful, making them the perfect dessert for any occasion. I had been wanting to make homemade ice-cream for a long time. The problem was, I didn't own an ice-cream maker, and without an ice-cream maker, I didn't think that I would be able to pull anything delicious off. But then I remembered a wonderful recipe my grandmother used to make. It was a raspberry ice-cream loaf. We would often have it when visiting her in Switzerland during the hot summer months. Made in the shape of a bread loaf and served in slices, it was the perfect refreshing afternoon treat. Not too heavy and sweet and just right for those hot summer afternoons. I have wonderful memories of eating a slice outside in the shade on her beautiful farm house property. I never had my grandmothers actual recipe, but I used its flavor as inspiration for this one. Made with whipping cream, condensed milk and raspberries, the ice cream is simple to make and so delicately delicious. I added a thin layer of Nutella to the bottom, because in my opinion, there is no better combination than that of chocolate and raspberries. However, it is wonderful on its own as well. So let's get started and whip up a batch of these heavenly treats together! In a small sauce pan heat your raspberries, sugar and water on medium heat. Heat and stir until your raspberries soften. With the help of the back of a spoon mash your raspberry mixture until you are left with a simple purée. Remove from the heat and let the mixture cool for 5-10 minutes . Over a small bowl, drain the juice from the remaining raspberry pulp and seeds. With the help of a wire sieve and the back of a spoon press down the raspberry mixture to extract the juice. Once you have pushed through all you can, pour the raspberry juice into your prepared whipped cream. Gently mix in the raspberry sauce until all is well incorporated. You will be left with a beautiful light pink cream. Pour your raspberry cream mixture into freezer safe molds (I prefer to use silicone as I find it easier to release the cakes afterwards. I have also tried popsicle molds, those work well as well. Place your molds in the freezer for a minimum of 3 hours (overnight is best) until the cream has frozen. If you would like to add a thin layer of nutella to the bottom of your cakes make sure to leave a little room in your mold. Also, be sure to first freeze the raspberry cream and then spread on the nutella. Freeze for an added 1- 2 hours or until the nutella has properly set. Remove from the freezer when you are ready to serve. If you find it difficult removing your cakes from the mold, dip the bottom of your mold in warm water for 5-10 seconds . This should melt a thin layer and make the cakes slip out more easily. Do not do it for too long, remember, we are working with ice-cream here! The origins of biscotti can be traced back to medieval times, when they were known as "bis-cotti" meaning "twice-cooked." This refers to the unique method of baking the cookie twice, which gives it its signature crisp texture. Making almond biscotti at home is a simple process, and the ingredients are likely already in your pantry. Remove from the oven and let cool completely. While your biscotti are cooling, prepare the chocolate dip and almond crumble. Finely chop the almonds and set aside. Roughly chop the chocolate. In a microwaveable bowl, put your chopped chocolate and microwave at 15 second intervals stirring each time, until your chocolate is completely melted and smooth. Stir in the almond extract. Which means that I have an excuse to throw more maple syrup into my recipes! Today, I am excited to share with you a recipe that is sure to satisfy your sweet and savory cravings. I also really really love brunch. That's how these muffins came to be. I wanted something easy to eat in the morning or for an easy snack to give to my kiddos for a quick boost before swim class, but I didn't want anything too sweet. The pancetta in this recipe balance out the sweetness of the maple sugar perfectly. To begin, if you do not have any store bought maple sugar, you can easily make it at home, you just need a candy thermometer. In a small saucepan heat up 1 cup maple syrup on medium-high heat. Let it come to a boil watching it so that it does not boil over (if the bubbles get to high, just give it a stir and they will dissipate). Cook until the temperature is between 257-263F (this will take about 20 minutes ). When the temperature is reached, remove the pot from the heat and begin stirring with a wooden spoon. Do not stop stirring. You will reach a point where all of a sudden the maple syrup turns from liquid to sugar very quickly. Don't worry about the sugar left stuck to the side of your pot. Simple soak it in hot water or put the pot back on the heat to bring the sugar back up to the melting point and then rinse. To make the crumble, mix together 1/3 cup maple sugar, 2 tablespoons of flour and 1 tablespoon butter. Mix until you reach a coarse sand-like consistency. Next, cook the pancetta until it is crispy and lay it out on a paper towel lined plate so that any extra oil is removed. Now that we have those two ready to go, we can make the batter. In a medium sized mixing bowl, mix together your vegetable oil, milk, egg and maple syrup. In a seperate bowl, sift togther your dry ingredients (flour, baking powder and salt). Slowly incorporate your liquid mixture into your flour mixture. Using a hand blender blend well. Next, use a rubber spatula to stir the cooked pancetta into your batter mixture. Preheat your oven to 350F . Prepare your muffin tin by lining it with reusable silicone muffin cups or paper cups, or simply spray your muffin tin with a non-stick spray. Scoop the muffin batter into the muffin cups until they are at least 3/4 full and sprinkle with your prepared maple sugar crumble. When the oven is ready, place the muffin tray onto the center rack and bake until golden brown or until toothpick inserted into the center comes out clean (approximately 18-20 minutes ). I do not make them often at home because for one, Macadamia nuts are not all that readily available where I am, and for two, white chocolate on it's own is not my favorite and so, I never really buy it. However, over Christmas and Easter, we tend to get a lot of chocolate from one source or another and white chocolate is bound to show up in the mix. Since no one really likes white chocolate on it's own in my house, it sits around on the counter or in the cupboard for months on end. They bring any baked good up a notch in both taste and presentation, and make for a delicious nibble if you want to treat yourself to some homemade candy. Let's go! Begin by preparing the peels. I love using a citrus zester with a channel knife to do this. I personally love my peels to be thin and delicate, and I find using a peeler allows me to make more delicate ribbons than if I was using a knife. However, if you do not have one on hand, or if you prefer to have more control on how big your candied peels are, using a sharp pairing knife will definitely do the trick as well. Cut the ends off the fruit. Score the peel into quarters, then carefully peel off the quarters trying to take as little of the pith as possible with it. Or simply use the channel knife on your zester to spiral around your citrus fruit to make thin ribbons Blanch the Peels: Place the peels in a saucepan and cover with cold water. Bring to a boil, then drain. Repeat this process two more times to reduce bitterness. Tip: Depending on how thick your peels are, you may want to repeat this process up to 4 times. Next Make a Sugar Syrup and add the peels: In a medium saucepan, combine 2 cups of sugar and 1 cup of water. Heat over medium heat, stirring until the sugar is dissolved. Add the blanched peels to the sugar syrup. Simmer on low heat for about 20-45 minutes (depending on the size of your peels), or until the peels are translucent.
